Instructions

Step 1

Prepare Ingredients

Dice the carrots, ham, green onion and garlic into small pieces.

Step 2

Whisk the eggs

In a large bowl or measuring cup with a lip, whisk the eggs thoroughly.

Step 3

Prepare the Egg Mixture

Add the ham, carrots, some green onions, and crushed garlic. Mix until evenly combined.

Add Seasoning

season the mixture with salt and pepper

Step 5

Preheat and Grease the Pan

Place a non-stick pan on medium-low heat. Lightly grease the surface with oil.

Step 6

Chili Oil Garlic Stir-Fry

Stir-fry the chili oil with crushed garlic and chopped green onions in a pan

Step 7

Pour in Omelette Base

Once the pan is hot, whisk the egg mixture again. Pour in enough mixture to form a thin, even layer.

Step 8

Cook the Omelette Base

Swirl the pan to spread the egg and fillings evenly. Cook for 2–3 minutes until the edges are set and the center is slightly moist.

Step 9

Fold the Omelette

Using a spatula, loosen the edges and bottom. Fold the omelette in half and gently press it down.

Step 10

Finish Cooking

Cook for 1 more minute until fully set. Flip if needed, or cover briefly to finish cooking.

Step 11

Serve

Remove from the pan, cut into portions, and serve hot with your choice of sides or condiments.
