
Eggs in Tomato Sauce with Bread
Ingredients
A splash of cooking oil (for frying)
½ can sardines in tomato sauce OR ½ can plain tomato sauce
A splash of water
1-2 eggs
1-2 slices of bread

Optional:
A bit of chopped onion or minced garlic
A pinch of chili flakes
A pinch of salt or pepper
A handful of vegetables (like spinach)

Instructions
1. Heat a pot with a bit of oil over low heat.
Use just enough oil to lightly coat the bottom of your pot, or 1 to 2 spoonfuls.

​Add chopped onion, garlic, or chili if using, and cook for a minute to soften.

2. Add the sardines with their sauce, a splash of water, and break up the sardines with a spoon.
Cook for 2-3 minutes on medium heat until gently simmering.
3. (Optional) Add any vegetables you have and simmer for a few more minutes until the vegetables are cooked. Add any salt, pepper, or other seasonings.

4. Use your spoon to make spaces in the sauce for the egg(s).
Crack the egg(s) directly into that space.

5. Cover the pan with a lid, plate, or aluminium foil, and turn the heat low.
Cook for 3-7 more minutes.

Tip: If you like soft yolks, cook for less time.

6. (Optional) Serve with toasted bread.
